  • range eggs 2. 4 gluten
  • free sausages 3. 6 slices gluten
  • free black forest ham 4. 4 oz gluten
  • free whole grain bread, sliced and toasted 5. 1 small red onion, thinly sliced 6. 1 medium tomato, sliced 7. 2 tsp fresh chives, finely chopped 8. 3 tbsp unsalted butter 9. Salt and pepper, to taste 10. Optional: gluten
  • free mustard, cheese, and fresh herbs for garnish

Instructions

  1. In a medium bowl, beat the eggs with a pinch of salt and pepper. Set aside.
  2. Heat 1 tbsp of butter in a non stick skillet over medium heat. Add the sliced onion and cook until softened and slightly caramelized, about 5 minutes. Remove from pan and set aside.
  3. In the same skillet, add another tablespoon of butter and cook the gluten free sausages until golden brown and cooked through, about 7 minutes. Set aside.
  4. Place two slices of gluten free bread on a baking sheet and toast in a preheated oven at 350°F (175°C) for 5 7 minutes or until crisp and golden.
  5. In the same skillet, add another tablespoon of butter and cook the tomato slices until slightly softened and seasoned with salt and pepper, about 2 minutes on each side. Remove from pan and set aside.
  6. Return the skillet to medium heat and pour in the beaten eggs. Cook without stirring until just set, about 3 4 minutes. Gently fold the eggs with a spatula and cook for another minute or two until soft curds form.
  7. To assemble, place a slice of gluten free bread on each plate, followed by a scoop of scrambled eggs, sausages, ham, caramelized onions, and tomatoes. Garnish with fresh chives, mustard, cheese, and herbs if desired.
