  • 2 large eggs
  • 2 tablespoons unsalted butter, melted and cooled
  • 2 medium apples, peeled, cored, and thinly sliced

  3. Heat a non stick pan or griddle over medium heat. Pour 1/4 cup of the pancake batter per pancake onto the heated surface. Place apple slices on top of each pancake. Cook for 2 3 minutes until bubbles appear, then flip and cook for another 2 minutes or until golden brown.
  4. Repeat with the remaining batter and apple slices. Serve warm, dusted with powdered sugar if desired.
