  • 1 cup almond flour
  • 1/2 cup gluten
  • free oat flour
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract

  • 1/4 teaspoon ground cinnamon
  • 2 cups fresh or frozen mixed berries (e.g., strawberries, raspberries, blueberries)
  • 1 tablespoon baobab fruit powder
  • 2 tablespoons water
  • Optional: extra berries for garnish

Instructions

  1. In a large mixing bowl, combine the coconut milk, almond flour, gluten free oat flour, maple syrup, vanilla extract, salt, and ground cinnamon. Mix well until a smooth batter forms.
  2. Preheat your steamer or double boiler and grease four ramekins or molds with coconut oil or non stick cooking spray.
  3. Divide the batter evenly among the prepared ramekins, smoothing out the tops.
  4. Steam or cook the ramekins in the double boiler for 20 minutes or until a toothpick inserted into the center comes out clean.
  5. While the Fufu Cakes are cooking, combine the mixed berries, baobab fruit powder, and water in a saucepan over medium heat. Cook for 10 minutes, stirring occasionally, until the compote thickens.
  6. Once the Fufu Cakes are cooked, carefully remove them from the steamer or double boiler. Let them cool for 5 minutes before inverting onto serving plates.
  7. Spoon the Baobab Berry Compote over and around each Fufu Cake. Garnish with extra berries if desired.
