  • 1 tablespoon unsalted butter
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (180°C). Roll out the gluten free shortcrust pastry on a floured surface, then gently press it into a 9 inch tart pan with a removable bottom. Trim off any excess dough, and prick the base with a fork. Bake for 20 minutes or until golden brown. Allow to cool completely.
  2. In a small saucepan, combine the lemon zest and juice with heavy cream and butter. Gently heat over low heat until the butter has melted and the mixture is infused with citrus flavors.
  3. Drizzle the sea salt caramel sauce evenly over the cooled tart crust. Pour the lemon infused cream over the caramel layer. Refrigerate the tart for at least 2 hours, or until set.
  4. Just before serving, sprinkle the chopped pistachios over the top of the tart. Dust with powdered sugar and slice into 8 wedges.
