Instructions

  1. In a large bowl, whisk together the heavy whipping cream, mascarpone cheese, erythritol, and vanilla extract until stiff peaks form. Set aside.
  2. Quickly dip each ladyfinger in the espresso, coating one side only, and place it in a single layer at the bottom of a 9x13 inch baking dish.
  3. Spread half of the mascarpone cream evenly over the soaked ladyfingers.
  4. In a small bowl, mix together cocoa powder and ground cinnamon. Sprinkle half of this mixture over the cream layer.
  5. Repeat steps 2 4 with remaining ladyfingers, cream, and cocoa cinnamon mixture.
  6. Cover and refrigerate for at least 4 hours or overnight.
  7. Before serving, dust with additional cocoa powder if desired.
