Ingredients

  • 1 cup brown lentils 1 cup long grain rice 2 cups macaroni 1 can chickpeas (15 oz) 1 onion, thinly sliced 1 green bell pepper, diced 2 tomatoes, chopped 2 cloves garlic 1 tbsp cumin 1 tsp paprika Salt and pepper to taste Olive oil Fresh parsley, for garnish

Instructions

  1. Cook lentils, rice, and macaroni according to package instructions until tender. Set aside.
  2. In a large skillet, heat 2 tbsp olive oil over medium heat. Add sliced onions and cook until golden brown, approximately 5 minutes. Remove from pan and set aside.
  3. Add more olive oil if needed. Sauté garlic, bell pepper, and tomatoes for about 5 minutes or until softened. Stir in cumin, paprika, salt, and pepper to taste.
  4. In a large bowl, combine cooked lentils, rice, macaroni, chickpeas, and sautéed vegetables. Mix well and adjust seasonings if necessary.
  5. Plate the dish with a generous helping of the mixture in the center. Top with golden brown fried onions and garnish with fresh parsley.
