Begin by cooking the wild rice according to package instructions, using water as the cooking liquid. Set aside.
Preheat your oven to 400°F (205°C).
In a large mixing bowl, toss diced carrots, parsnips, and rutabagas with olive oil, salt, and pepper. Spread the vegetables evenly on a baking sheet and roast for 25 30 minutes until tender and slightly browned. Remove from oven and set aside.
In a large skillet, heat a small amount of olive oil over medium heat. Add sliced mushrooms and cook until they release their liquid and become tender. Season with salt and pepper to taste.
Add onions and garlic to the pan with the mushrooms, cooking until the onion is translucent.
Pour in the vegetable broth and heavy cream (or coconut cream), stirring well to combine. Bring the mixture to a simmer and cook for 5 minutes until slightly thickened. Stir in parsley and thyme.
