Instructions

  1. Preheat oven to 400°F (200°C). Toss the asparagus in olive oil, salt, and pepper. Spread on a baking sheet and roast for 15 20 minutes until tender and slightly charred. Set aside.
  2. In a medium saucepan, bring water, milk, and salt to a boil. Gradually add the polenta while stirring constantly to prevent lumps. Reduce heat and simmer, covered, for 5 7 minutes or until tender. Stir in butter and Parmesan cheese. Set aside and keep warm.
  3. In a large skillet, heat olive oil over medium high heat. Season chicken breasts with salt and pepper, then cook until browned on both sides. Remove from the pan and set aside.
  4. In the same skillet, add onion and garlic. Sauté for 2 3 minutes or until softened. Stir in paprika and tomato paste. Cook for 1 minute to release the flavors of the spices.
  5. Return chicken to the pan and add chopped fresh tomatoes or canned diced tomatoes. Pour in chicken broth and bring to a simmer. Reduce heat and let it cook for 20 25 minutes, until the chicken is cooked through. Season with salt and pepper to taste.
  6. Serve the Hungarian Chicken Paprikash over warm polenta, accompanied by roasted asparagus. Garnish with fresh parsley.
