  • 3. Tart Shell: 1 1/4 cups (150g) vegan shortcrust pastry mix 1/4 cup (60ml) cold water 4. Chocolate Mousse Filling: 1 cup (200g) dairy
  • free dark chocolate, chopped 1 cup (240ml) coconut cream 1 cup (240ml) unsweetened almond milk 1/4 cup (60g) vegan sugar 1 tsp (5ml) vanilla extract 1/4 tsp (1.5g) sea salt 2 cups (480ml) cold dairy
  • free whipped cream, for garnish

Instructions

  1. Prepare the tart shell by combining the vegan shortcrust pastry mix with cold water and shaping into a ball. Roll out between parchment paper and fit into a 9 inch (23cm) tart pan. Trim edges, prick bottom with a fork, and chill for 30 minutes.
  2. Preheat oven to 375°F (190°C). Line the chilled tart shell with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, then remove weights and parchment and bake another 8 10 minutes until golden. Let cool on a wire rack.
  3. In a double boiler, melt chopped dark chocolate and coconut cream together. Remove from heat and whisk in almond milk, vegan sugar, vanilla extract, and sea salt. Allow to cool, then chill for 1 hour.
  4. Whip the cold dairy free whipped cream until soft peaks form. Fold a quarter of the whipped cream into the chocolate mousse mixture, then gently fold in the remaining whipped cream until well combined.
  5. Spoon the chocolate mousse filling into the cooled tart shell and smooth the surface. Chill for at least 3 hours or overnight before serving.
