Ingredients

  • 1 1/2 cups raw cashews, soaked overnight
  • 1/2 cup freshly squeezed lemon juice
  • 1/3 cup agave syrup
  • 1/4 cup coconut oil, melted
  • 2 tbsp acai powder
  • 1/2 cup passion fruit pulp
  • 1 can full
  • fat coconut milk, refrigerated overnight
  • Edible gold leaf, for garnish

Instructions

  1. Drain and rinse the soaked cashews, then blend with lemon juice, agave syrup, and half of the melted coconut oil in a high speed blender until creamy and smooth. Pour into a lined loaf pan and freeze for at least 4 hours or overnight.
  2. In another bowl, whisk together acai powder, remaining coconut oil, and a splash of water until smooth. Spread over the frozen cashew layer and return to the freezer until set, about 1 2 hours.
  3. Open the can of coconut milk, being careful not to shake or mix it. Scoop out the solid cream at the top into a chilled bowl. Add agave syrup and whisk with an electric mixer until fluffy and smooth.
  4. Remove the acai layer from the freezer and spread the whipped coconut cream on top, smoothing the surface. Return to the freezer until ready to serve.
  5. Just before serving, top each slice with passion fruit pulp and a delicate piece of edible gold leaf.
