Transfer the cooled cherry mixture to a blender along with the limoncello and mixed berries. Blend until smooth. Strain the mixture through a fine mesh sieve into a large bowl. Discard any solids. Stir in the sparkling water, and pour the mixture into an ice cream maker. Freeze according to the manufacturer's instructions. Transfer the frozen sorbet to a lidded container and freeze until firm.
