Ingredients
- 2 cups fresh mixed berries (raspberries, blueberries, blackberries)
- 1/2 cup granulated sugar
- 1/2 cup water
- 1 tablespoon lemon juice
Instructions
- In a medium saucepan, combine the water and sugar over medium heat. Stir until the sugar dissolves completely.
- Add the mixed berries and lemon juice to the saucepan and bring the mixture to a simmer. Cook for about 5 minutes until the berries release their juices and soften.
- Remove from heat and let it cool for a few minutes. Then, strain the mixture through a fine mesh strainer into a bowl to remove the seeds and skin. Press the fruit to extract as much liquid as possible.
- Cover the bowl with plastic wrap and refrigerate the berry puree for at least 2 hours or until thoroughly chilled.
- Transfer the chilled berry puree into an ice cream maker and churn according to the manufacturer's instructions.
- Once the sorbet has reached a soft, scoopable consistency, transfer it to a lidded container and freeze for at least 4 hours or until firm.
