  • 100g cocoa powder
  • 8 large eggs, separated
  • 300g medjool dates, pitted
  • 400ml almond milk
  • 50g cacao nibs
  • 2 cups fresh cherries, pitted
  • 1 tbsp vanilla extract
  • A pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together almond flour, coconut flour, cocoa powder, and a pinch of salt.
  3. In another bowl, blend the egg yolks with medjool dates until smooth.
  4. Add almond milk to the date mixture and mix well.
  5. Pour the wet ingredients into the dry ingredients, stirring gently until combined.
  6. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold them into the batter.
  7. Fold in cacao nibs and cherries, reserving a few cherries for garnish.
  8. Pour the batter into a greased cake pan and bake for 35 40 minutes, or until a toothpick inserted comes out clean.
  9. Allow the cake to cool completely before removing from the pan.
  10. Slice the cake into two layers, spreading a layer of whipped coconut cream between them. Garnish with reserved cherries and cacao nibs.
