Enchanted Spanish Frozen Treat: Coconut Lime Paletas

Ingredients

• 1. 1 ½ cups full
• fat coconut milk 2. 1 can (14 oz) sweetened condensed milk 3. 1 tsp pure vanilla extract 4. Zest and juice of 4 limes 5. 1 ¾ cups heavy cream 6. 1 drop natural green food coloring (optional) 7. Pinch of sea salt 8. 2 cups cold water 9. Ice 10. Wooden sticks

Instructions

1. In a large bowl, whisk together the coconut milk, sweetened condensed milk, vanilla extract, lime zest and juice, heavy cream, food coloring (if using), and sea salt until well combined. Cover with plastic wrap and refrigerate for at least 2 hours or until thoroughly chilled.
2. Fill a blender with half of the mixture and blend on high until smooth and velvety. Pour the blended mixture into a large pitcher. Repeat with the remaining mixture, ensuring a uniform texture.
3. Set up your ice cream maker according to the manufacturer's instructions. Slowly pour the blended mixture into the ice cream maker and churn according to the manufacturer's guidelines until it reaches a soft serve consistency.
4. While the mixture is churning, freeze 6 paleta molds or small dixie cups on a leveled baking sheet.
5. Once the mixture has reached the desired consistency, carefully spoon or pipe the frozen treat into the prepared molds, filling each one to the brim. Insert a wooden stick into each mold and place in the freezer for at least 4 hours or until solidly frozen.
