  • 1. 2 ripe mangoes, peeled and cut into cubes 2. 1 can (400ml) full
  • fat coconut milk 3. 1/2 cup (100g) granulated sugar 4. 1/4 cup (60ml) fresh lime juice 5. 1 tsp vanilla extract 6. A pinch of salt 7. Crushed ice or ice cubes, for serving

Instructions

  1. In a blender, combine the mango cubes, coconut milk, sugar, lime juice, vanilla extract, and a pinch of salt. Blend until smooth and creamy.
  2. Taste the mixture and adjust sweetness or tartness if needed.
  3. Pour the mixture into popsicle molds, leaving about 1/4 inch space from the top. Insert popsicle sticks into each mold.
  4. Freeze for at least 6 hours or overnight until solid.
  5. To serve, run warm water over the bottom of the popsicle mold for a few seconds to loosen the frozen treats. Release them and place each popsicle onto a plate surrounded by crushed ice.
