Ingredients
- 2 cups fresh pineapple, chopped
- 1 cup fresh mango, chopped
- 1 cup fresh papaya, chopped
- 1 cup full
- fat coconut milk
- 1 cup water
- 2 stalks lemongrass, bruised and roughly chopped
- 3 tablespoons honey or maple syrup (for Paleo)
Instructions
- In a blender, combine pineapple, mango, papaya, coconut milk, water, and bruised lemongrass. Blend until smooth.
- Strain the mixture through a fine mesh sieve into a large pitcher to remove any pulp.
- Stir in honey or maple syrup to taste. Chill for at least 1 hour.
- Serve over ice and garnish with fresh fruit slices and lemongrass sprigs.
