  • grade salmon, thinly sliced 1 ripe avocado, pitted and sliced 1/4 cup cucumber, thinly sliced 1/4 cup carrot, julienned 1 tbsp low
  • sodium soy sauce 1 tsp rice vinegar 1/2 avocado, sliced (for garnish)

Instructions

  1. Place the nori sheet on a bamboo sushi mat.
  2. Mix the low sodium soy sauce and rice vinegar in a small bowl for the dipping sauce. Set aside.
  3. Arrange cucumber and carrot strips over two thirds of the nori sheet, leaving a 1 inch border at the top edge.
  4. Add salmon slices on top of the vegetables.
  5. Carefully roll up the sushi using the bamboo mat, applying gentle pressure to ensure everything is wrapped tightly. Wet the top border with water to seal the roll.
  6. Cut into 8 even pieces using a sharp knife.
  7. Serve the sushi rolls with the dipping sauce on the side. Garnish with additional avocado slices for added freshness.
