Ingredients

  • 6 large rice paper rounds 1 cup mixed leafy greens (e.g., lettuce, spinach) 1 medium carrot, julienned 1/2 cucumber, thinly sliced 1/4 cup fresh cilantro leaves 1/4 cup fresh mint leaves 8 shrimp (or tofu for vegetarian option), peeled and deveined 1/2 lime, juiced

Instructions

  1. Fill a large bowl with warm water. Soak each rice paper round in the water for about 30 seconds until softened. Remove and place on a clean surface.
  2. Place a few leafy greens on the bottom half of the rice paper, followed by some carrot, cucumber, cilantro, and mint leaves. Add 2 shrimp (or tofu) on top.
  3. Fold in the sides of the rice paper and roll it tightly into a cylinder. Repeat with the remaining ingredients.
