  • 1 cup uncooked quinoa, rinsed 2 cups water or vegetable broth Zest and juice of 1 lime 1 large navel orange, segmented 1 large grapefruit, segmented 1 small red onion, thinly sliced 1/2 cup chopped fresh cilantro 1/4 cup toasted almonds, roughly chopped 1 avocado, diced Salt and pepper, to taste

  3. Just before serving, gently fold in the diced avocado. Season with salt and pepper as desired.
