Instructions

  1. Prepare chiffon cake by sifting together dry ingredients in a large bowl. In another bowl, combine water, oil, vanilla extract, and ground sakura blossoms. Add flax eggs and mix well. Pour wet mixture into dry ingredients and whisk until smooth. Bake at 325°F (160°C) for 35 40 minutes or until a toothpick comes out clean. Let cool completely.
  2. For the sakura mousse, heat almond milk in a saucepan with sugar and agar agar powder. Stir until dissolved, then add coconut cream, ground sakura blossoms, and vanilla extract. Chill until set. Whip cold coconut cream until fluffy and fold into the set mousse.
  3. For the matcha ganache, heat almond milk in a saucepan. Add matcha powder and whisk until smooth. Pour over chocolate chips and let sit for 2 minutes before stirring until glossy and smooth. Cool to room temperature.
  4. Assemble the cake by placing cooled chiffon cake on a serving plate, trimming the top for an even surface. Spread a thin layer of matcha ganache, followed by a thick layer of sakura mousse. Refrigerate until set.
  5. Drizzle remaining matcha ganache over the set mousse, creating a silky waterfall effect. Decorate with fresh sakura blossoms for an enchanting touch.
