Ingredients

  • 150g dark chocolate (60% cacao)
  • 200ml heavy cream
  • 2 tbsp unsalted butter
  • Zest of 1 orange
  • 3 tbsp dark rum
  • 200g milk chocolate, finely chopped
  • Cocoa powder for dusting

Instructions

  1. Chop the dark chocolate and place it in a heatproof bowl.
  2. In a saucepan, bring the heavy cream to a simmer, then pour it over the chocolate. Let it sit for 1 minute before gently stirring until smooth.
  3. Add the butter, orange zest, and dark rum to the chocolate mixture, whisking until fully combined. Cover and refrigerate for at least 4 hours or overnight.
  4. Once the ganache has firmed up, use a melangeur or food processor to process the milk chocolate into fine crumbs.
  5. Scoop out the chocolate ganache using a small ice cream scoop, roll into balls, and then coat each one in the processed milk chocolate. Place on a parchment lined tray and freeze until firm.
  6. Dust with cocoa powder just before serving.
