  • 2 cups almond flour 1 cup coconut flour 1/2 cup coconut oil 1/2 cup honey 1 tsp cinnamon 1/2 tsp cardamom 1/4 tsp nutmeg 1/4 cup dried apricots, finely chopped 1/4 cup pistachios, roughly chopped Zest of 1 orange

Instructions

  1. In a large mixing bowl, whisk together almond flour and coconut flour.
  2. Melt the coconut oil in a small saucepan over low heat, then stir in honey, cinnamon, cardamom, and nutmeg until fully combined.
  3. Pour the spiced liquid into the dry ingredients, mixing well to form a dough.
  4. Fold in apricots, pistachios, and orange zest.
  5. Cover the mixture and refrigerate for 1 hour.
  6. Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
  7. Shape the dough into small, bite sized balls and place them on the prepared baking sheet.
  8. Bake for 20 minutes or until lightly golden.
  9. Remove from oven and let cool completely.
