  • 1/2 cup walnuts, roughly chopped

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8 inch round cake pan. In a medium bowl, whisk together the whole wheat flour, all purpose flour, almond flour, baking soda, and salt. Set aside. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add in the Ethiopian honey, vanilla extract, and mix well. Stir in the egg and yogurt into the honey mixture until fully combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. Fold in the chopped walnuts using a rubber spatula. Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake for 35 40 minutes or until a toothpick inserted into the center comes out clean. Remove from oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
