In a medium bowl, whisk together the eggs, chopped cilantro, salt, and pepper until fully combined. Set aside.
In a separate bowl, mash the avocado with turmeric, cumin, smoked paprika, salt, and pepper (and nutmeg if using) into a smooth consistency. Set aside.
Preheat an 8 inch nonstick or cast iron skillet over medium heat. Add 1 tbsp of ghee or grass fed butter to the skillet and allow it to melt.
Once the butter has melted, pour in half of the egg mixture, and cook for about 3 minutes, or until the edges have set but the center is still slightly runny.
Carefully flip the omelette using a spatula, and cook for another 1 2 minutes, or until the desired doneness is reached. Remove from skillet and place on a plate.
Repeat steps 3 5 with the remaining egg mixture to create a second omelette.
Place the first omelette on a serving dish, spread the spiced avocado mash evenly over the surface, then carefully place the second omelette on top.
Drizzle the remaining ghee or butter over the omelette and serve immediately.
