Season Mahi Mahi fillets with salt and pepper. In a large pan, heat olive oil over medium high heat. Sear Mahi Mahi for 4 minutes per side or until cooked through. Remove from pan and let rest.
In the same pan, add 2 tbsp butter and sauté mixed vegetables until tender. Season with salt and pepper.
Plate gnocchi in a mound on one side of the plate, Mahi Mahi fillet on top, and vegetable medley on the other side.
