Instructions

  1. Begin by preparing the paneer tikka masala. Heat a tablespoon of ghee or oil in a pan over medium heat, add the cubed paneer, and cook until golden brown on all sides. Remove from heat and set aside.
  2. In another pan, heat the remaining ghee or oil and add cumin seeds. Once they sizzle, add the chopped onion, garlic, and grated ginger, and sauté until the onions are translucent.
  3. Add the finely chopped green chili to the pan and cook for another minute. Then, stir in the tomato puree and cook for 5 minutes, or until the mixture thickens.
  4. Add the cooked paneer cubes to the pan and mix well. Pour in the heavy cream or coconut milk, and season with garam masala, salt, and pepper to taste. Cook for another 3 4 minutes, allowing the flavors to meld together.
  5. While the paneer tikka masala simmers, cook the basmati rice according to package instructions. Fluff with a fork and keep warm.
  6. Serve the creamy paneer tikka masala over the fluffy basmati rice, garnished with fresh cilantro leaves. Accompany with papadums and pickles for a complete gluten free Indian feast.
