  1. In a large bowl, mix together almond flour, eggs, almond milk, baking powder, and salt. Add melted coconut oil and whisk until well combined. Let the batter rest for 5 minutes.
  2. In another bowl, combine avocado, cherry tomatoes, red onion, cilantro, lime zest, and lime juice to make the salsa. Set aside.
  3. Whip the solid coconut cream with a hand mixer or stand mixer until soft peaks form. Add honey or sugar substitute for keto, and whip again until well combined.
  4. Heat a non stick pan over medium heat. Pour 1/4 cup of batter per pancake onto the pan and cook for 2 3 minutes on each side or until golden brown. Repeat for all pancakes.
  5. Serve pancakes hot, topped with coconut whipped cream and avocado salsa.
