2 cups glutinous rice flour
1/2 cup granulated sugar
1/4 teaspoon salt
1 cup water
3 tablespoons unsalted butter, softened
6 oz bittersweet chocolate, finely chopped
1 cup heavy cream
2 teaspoons matcha green tea powder
Edible flowers and mint leaves for garnish (optional)
Instructions
In a large mixing bowl, whisk together glutinous rice flour, sugar, and salt. Gradually add water, stirring until well combined.
Microwave the mixture in 30 second intervals, stirring between each interval, until it forms a smooth, stretchy dough.
Knead the warm mochi dough for about 1 minute to release steam and prevent sticking.
Shape the dough into 6 equal portions and set aside.
In a double boiler or microwave safe bowl, melt the chopped chocolate. Stir in heavy cream and matcha powder until smooth and glossy. Set aside to cool slightly.
Assemble the mochi cakes by placing one portion of dough on a piece of plastic wrap, flattening it into a circle, and wrapping it tightly. Repeat for all portions. Chill in the refrigerator for 10 minutes.
Unwrap the chilled mochi circles and flatten them slightly. Place a dollop of ganache on one mochi circle, top with another, and carefully press down around the edges to seal. Repeat for all cakes.
Optional: Garnish each cake with edible flowers and mint leaves before serving. Serve immediately.
