Ingredients
- 1 lb ground chicken
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 1/4 cup chopped cilantro
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon olive oil For the Garlic Cilantro Sauce:
- 1/2 cup mayonnaise
- 1/4 cup chopped cilantro
- 2 cloves garlic, minced
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground chicken, almond flour, Parmesan cheese, egg, cilantro, cumin, smoked paprika, salt, and pepper. Mix well until all ingredients are incorporated.
- Form the chicken mixture into 1 inch balls and then flatten them slightly to create croquette shapes.
- Heat olive oil in a large skillet over medium heat. Fry the croquettes until golden brown on both sides, about 4 5 minutes per side. Remove from skillet and let cool slightly on paper towels.
- In a separate bowl, prepare the Garlic Cilantro Sauce by combining mayonnaise, cilantro, garlic, lime juice, salt, and pepper. Mix well.
- Serve croquettes warm with a side of Garlic Cilantro Sauce for dipping.
