  • 2 large ripe avocados
  • 1 lb ground beef
  • 1 medium onion, finely chopped
  • 1 cup cooked white rice (optional)
  • 1/2 cup almond flour
  • 1 egg, beaten
  • 1 tsp salt
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 cup raisins or currants
  • 1/4 cup chopped almonds
  • 1/4 cup tomato salsa

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cut avocados in half, remove pit, and scoop out a little flesh to create a boat. Place on a baking sheet.
  3. In a pan, cook ground beef with onions until browned. Drain excess fat.
  4. Add rice (if using), almond flour, beaten egg, salt, coriander, cumin, cinnamon, cloves, raisins, and chopped almonds to the cooked meat mixture. Mix well.
  5. Stuff each avocado boat with the meat mixture and press gently to shape. Bake for 15 minutes.
  6. While avocados are baking, prepare tomato salsa and roast sweet potatoes.
  7. Remove avocado boats from oven and serve immediately, topped with tomato salsa.
  8. Serve roasted sweet potatoes on the side for a complete Paleo friendly brunch experience.
