  • 1 lb grass
  • fed ground beef 1 large onion, finely chopped 2 tbsp butter or coconut oil 1 large garlic clove, minced 1 cup cauliflower rice 1/4 cup almond flour 2 large eggs 1 tsp ground coriander 1/2 tsp ground cumin 1/2 tsp ground allspice 1/2 tsp ground cinnamon 1/4 tsp nutmeg Salt and pepper, to taste 3 tbsp chopped parsley 1 avocado, mashed 1 lime, juiced 1/2 tsp chili powder 1/4 cup fresh cilantro, finely chopped

Instructions

  1. Preheat oven to 375°F (190°C). In a large skillet, sauté onions in butter or coconut oil until softened. Add garlic and cook for an additional minute. Add ground beef to the skillet with the onion mixture and cook until browned. Drain excess fat if needed. Stir in coriander, cumin, allspice, cinnamon, nutmeg, salt, pepper, and parsley. Cook for an additional 2 minutes. Remove from heat and let cool slightly. In a separate bowl, mix cauliflower rice with almond flour, eggs, and cooked ground beef mixture. Using a springform pan or mold, press the mixture into the shape of a large log or roll, ensuring it's compact and even. Place in the oven for 30 minutes, or until golden brown. Remove from oven and let cool slightly before slicing. For the spicy avocado sauce, mix mashed avocado with lime juice, chili powder, salt, and pepper to taste. Stir in chopped cilantro. To plate, slice the cooled bobotie roll into individual servings and place atop a bed of cauliflower rice. Drizzle with spicy avocado sauce and garnish with fresh herbs.
