Heat 1 tbsp of oil in a non stick skillet over medium heat. Pour in the shrimp egg mixture and cook for 2 3 minutes until firm and slightly golden. Fold the omelette in half and cook for another minute. Transfer to a plate. Prepare Crispy Fried Rice: In a large wok, scramble eggs with a pinch of salt. Remove from heat and break into small pieces. Add cold jasmine rice and mix well. Stir fry over high heat until the rice turns golden brown. Add frozen mixed vegetables, green onions, fish sauce, sugar, and black pepper. Stir fry for another 2 minutes or until heated through.
