Instructions

  1. Prepare the dipping sauce by whisking together peanut butter, soy sauce, rice vinegar, lime juice, ginger, garlic, sriracha, and warm water in a small bowl until smooth and creamy. Set aside.
  2. Fill a large bowl with warm water. Dip one rice paper sheet into the water for a few seconds until softened. Transfer to a clean work surface or damp towel.
  3. Place 3 4 sprouts, carrots, cucumber, cabbage, avocado slices, red and yellow bell pepper slices, 2 3 cilantro leaves, and mint leaves on the softened rice paper, arranging them in a horizontal line about one third of the way up.
