Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9 inch springform pan. In a large bowl, whisk together the almond flour, coconut sugar, cocoa powder, baking soda, and salt. In another bowl, mix together the applesauce, almond milk, apple cider vinegar, melted coconut oil, and vanilla extract. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the raspberries and dates. Pour the batter into the prepared springform pan and bake for 30 35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely. Once cooled, remove the cake from the springform pan and slice into two equal layers. Set aside.
