In a medium bowl, combine shredded sharp cheddar cheese, chopped pimento peppers, garlic powder, onion powder, salt, and pepper. Mix well to create the pimento cheese mixture.
Lay out 6 slices of white bread on a flat surface. Spread a generous layer of pimento cheese mixture onto each slice. Top with another slice of bread to create sandwiches.
Preheat a large griddle or skillet over medium heat. Spread softened butter on the outsides of all 6 sandwich slices.
Carefully place the sandwiches on the hot griddle, buttered side down. Butter the tops of the sandwiches as well. Cook for about 3 minutes, until golden brown. Flip and cook for an additional 3 minutes, or until crispy and cheesy goodness oozes out from the edges.
While the sandwiches are grilling, prepare the Cajun remoulade by combining mayonnaise, ketchup, chopped parsley, Dijon mustard, lemon juice, Worcestershire sauce, minced garlic, hot sauce (optional), smoked paprika, ground cumin, ground black pepper, and salt in a small bowl. Mix well and refrigerate until ready to serve.
Remove sandwiches from heat, let them rest for 1 minute, then cut each sandwich diagonally into two triangles. Serve immediately with a dollop of Cajun remoulade on the side.
