2 lbs chicken breast, thinly sliced

4 cups cherry tomatoes, halved
1/2 cup red onion, finely diced
1 jalapeno, seeded and minced
2 tbsp fresh cilantro, chopped
Juice of 1 lime

Instructions
In a large bowl, combine the thinly sliced chicken, onion, and bell peppers. Add the lime juice, olive oil, chili powder, smoked paprika, cumin, salt, and pepper. Toss to coat evenly. Let marinate for 30 minutes, or up to 2 hours for a deeper flavor.
Preheat your grill to medium high heat. Thread the marinated chicken and vegetables onto skewers, leaving space between each piece to ensure even cooking. Grill the skewers for about 5 7 minutes per side, or until the chicken is cooked through and the vegetables are tender.
While the skewers are grilling, prepare the Firecracker Salsa by combining the cherry tomatoes, red onion, jalapeno, cilantro, lime juice, salt, and pepper in a bowl. Mix well and let rest for 15 minutes to allow flavors to meld.
Remove the skewers from the grill and let them rest for a minute or two before removing the chicken and vegetables from the skewers. Serve the fajita filling with warm tortillas, garnished with fresh cilantro and a dollop of sour cream, if desired. Top each serving with a generous helping of Firecracker Salsa.
