Ingredients

  • 4 ears of corn, shucked
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup fresh lime juice
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 1 cup crumbled Cotija cheese
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons chili powder
  • 2 tablespoons vegetable oil

Instructions

  1. In a small bowl, whisk together the mayonnaise, sour cream, lime juice, smoked paprika, and ground cumin until smooth. Season with salt and pepper to taste, and set aside. This is our zesty Lime Crema.
  2. Preheat your grill or stovetop griddle to medium high heat. Brush the corn with vegetable oil and season it with chili powder, salt, and pepper to taste. Grill the corn, turning occasionally, until it's charred and tender, about 8 minutes.
  3. Remove the corn from the grill and let it cool slightly. Slather each ear of corn with a generous amount of Lime Crema and top with crumbled Cotija cheese. Finish by sprinkling chopped cilantro over the top.

Chef’s Insight

To give your corn an extra charred flavor, grill it for an additional minute after you apply the toppings.

Notes

To enhance the smokiness, you can wrap each corn in aluminum foil and grill it until tender.

Cultural or Historical Background

This dish is inspired by the popular Mexican street food, elotes. The addition of Lime Crema and Cotija cheese adds a unique twist, perfect for festival celebrations.
