Ingredients

  • 2 lbs boneless, skinless chicken breasts, thinly sliced
  • 3 bell peppers (red, yellow, and green), sliced into strips
  • 1 large onion, thinly sliced
  • 4 tablespoons olive oil
  • 3 tablespoons adobo sauce from canned chipotles in adobo
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Juice of 1 lime
  • 12 flour tortillas, warmed
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine chicken, bell peppers, onion, olive oil, adobo sauce, smoked paprika, cumin, chili powder, garlic powder, cayenne pepper (if using), lime juice, salt, and pepper. Toss to coat evenly.
  2. Preheat a large grill or grill pan over medium high heat. Add the chicken mixture in a single layer and cook for 5 6 minutes per side until cooked through and slightly charred. Remove from heat and let rest for 5 minutes.
  3. Slice the chicken into strips and return to the grill to reheat, if necessary. Serve with warm flour tortillas, allowing each person to assemble their own fajitas.

Chef’s Insight

Don't be afraid to adjust the heat level by adding more or less cayenne pepper to your taste.

Notes

The adobo sauce can be found in the international aisle of most supermarkets or in the ethnic foods section.
