  • 4 (6 oz) beef tenderloin steaks, about 1 inch thick
  • 2 cups wood chips, soaked in water for at least 30 minutes

Instructions

  1. Preheat a gas or charcoal grill for medium high heat. Drain the wood chips and place them in a smoker box or pouch, and place it on one side of the grill.
  2. Season both sides of each steak with salt and black pepper. Brush one side of each steak with the Festival Firecracker Sauce.
  3. Place the steaks on the grill, sauce side down, over indirect heat. Close the lid and cook for 6 minutes. Flip the steaks and brush the remaining side with more sauce.
  4. Cook for another 5 minutes, or until the desired doneness is reached.
  5. Remove the steaks from the grill and let them rest for 5 minutes before serving.
