Ingredients

  • 6 boneless, skinless chicken breasts
  • 1/2 cup fresh lemon juice
  • 1/3 cup olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • Wooden or metal skewers

Instructions

  1. Cut the chicken breasts into 1 inch cubes and thread onto skewers, 6 per skewer.
  2. In a large resealable plastic bag or shallow dish, combine lemon juice, olive oil, garlic, rosemary, thyme, salt, and pepper. Add the skewered chicken and marinate for at least 30 minutes or up to 4 hours in the refrigerator.
  3. Preheat a grill or grill pan over medium high heat. Grill the skewers for about 6 8 minutes per side, or until cooked through and slightly charred. Allow to rest for a few minutes before serving.
