Ingredients
- 6 ears of corn, shucked and cleaned
- 1/2 cup mayonnaise
- 1 tablespoon hot sauce
- 1 teaspoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups grated Cotija cheese
- 1/4 cup chopped fresh cilantro
- 2 limes, cut into wedges
Instructions
- In a small bowl, combine the mayonnaise, hot sauce, paprika, cumin, garlic powder, salt, and pepper to make the spicy mayo. Set aside.
- Preheat a grill or grill pan over medium high heat. Brush the corn with some of the spicy mayo and season with salt and pepper.
- Grill the corn, turning occasionally, until tender and slightly charred on all sides, about 8 to 10 minutes. Remove from the grill and let cool for a few minutes.
- While the corn is still warm, spread more spicy mayo over each ear of corn, then sprinkle generously with Cotija cheese and cilantro. Serve immediately with lime wedges on the side.
