Ingredients

  • 4 large flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 can (4 ounces) diced green chiles, drained
  • 1 cup chopped cooked chicken
  • 1/2 cup sour cream
  • 2 tablespoons taco seasoning
  • 1 tablespoon vegetable oil

Instructions

  1. In a small bowl, combine the sour cream and taco seasoning set aside.
  2. Spread a thin layer of the sour cream mixture on one side of each tortilla.
  3. Sprinkle 1/4 cup shredded cheese on top of the sour cream mixture on one half of each tortilla.
  4. Add 1/4 of the chicken and green chiles on top of the cheese, then fold the tortilla in half, enclosing the filling.
  5. Heat the vegetable oil in a large skillet over medium heat.
  6. Place two quesadillas at a time in the skillet and cook for 2 3 minutes per side or until golden brown and the cheese is melted. Repeat with remaining quesadillas.
  7. Slice each quesadilla into four wedges, serve immediately, and enjoy the taste of game day!
