Ingredients

  • 4 large ears of corn, shucked
  • 2 tablespoons vegetable oil
  • 1/2 cup mayonnaise
  • 2 tablespoons adobo sauce from canned chipotle peppers in adobo
  • 1 tablespoon lime juice
  • 1/4 teaspoon ground cumin
  • Salt and pepper, to taste
  • 1/3 cup finely grated Parmesan cheese
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Heat a grill or grill pan to medium high heat. Brush the corn with vegetable oil and season with salt and pepper. Grill the corn, turning occasionally, until slightly charred and tender, about 8 minutes. Transfer to a plate.
  2. In a small bowl, mix together the mayonnaise, chipotle adobo sauce, lime juice, cumin, salt, and pepper. Stir in the Parmesan cheese.
  3. Spread the chipotle crema evenly over each ear of corn. Sprinkle with chopped cilantro and serve immediately.
