Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 cups pineapple chunks
  • 1/4 cup soy sauce
  • 3 tbsp brown sugar
  • 1 tsp ground black pepper
  • 1/4 cup chopped cilantro
  • 1 tbsp vegetable oil For the Sweet Chile Garlic Sauce:
  • 1/2 cup chili garlic sauce
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil

Instructions

  1. Preheat your grill or grill pan to medium high heat.
  2. In a large bowl, combine shrimp, pineapple chunks, soy sauce, brown sugar, and ground black pepper. Mix well, and let marinate for 15 minutes.
  3. While the shrimp and pineapple are marinating, prepare the Sweet Chile Garlic Sauce by whisking together chili garlic sauce, soy sauce, honey, rice vinegar, and sesame oil in a small bowl. Set aside.
  4. Thread marinated shrimp and pineapple onto skewers, leaving space between each piece for even cooking.
  5. Brush both sides of the skewered shrimp and pineapple with vegetable oil, then grill for 2 3 minutes per side or until shrimp are pink and pineapple is slightly charred.
  6. Remove from heat and brush the Sweet Chile Garlic Sauce generously over the cooked skewers. Garnish with chopped cilantro before serving.

Chef’s Insight

The key is in the marination - it adds depth of flavor and prevents the shrimp from drying out during grilling.
