  • 6 bratwurst sausages
  • 12 oz can of lager beer (preferably a local Texas craft beer)
  • 3 chipotle peppers in adobo sauce, minced
  • 1 medium white onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon black pepper
  • Salt to taste
  • 6 hot dog buns
  • Optional: mustard, sliced jalapeños, shredded cheese, diced onions, pickles

Instructions

  1. In a large pot, combine the beer, minced chipotle peppers, onion, garlic, cumin, paprika, coriander, black pepper, and salt. Mix well to blend all flavors.
  2. Add bratwurst sausages to the pot and let them soak in the marinade for at least 30 minutes or up to overnight.
  3. Preheat your grill or stovetop griddle to medium heat. Remove sausages from the marinade, allowing excess liquid to drip off.
  4. Grill brats for about 15 20 minutes, turning occasionally, until fully cooked and slightly charred on all sides.
  5. Toast hot dog buns on the grill for a minute or two.
  6. Place bratwurst in toasted buns and top with your favorite condiments. Enjoy immediately!
