Ingredients

  • 1 lb boneless chicken thighs 8 oz jumbo shrimp, peeled and deveined 4 ears corn on the cob, husked and cleaned 2 large red bell peppers, seeded and quartered 1/4 cup melted butter 3 tbsp Southern Grill Seasoning (see below) 2 tbsp fresh cilantro, chopped Lime wedges for serving Southern Grill Seasoning: 2 tsp paprika 1 tsp garlic powder 1 tsp onion powder 1/2 tsp ground black pepper 1/2 tsp cayenne pepper 1/2 tsp dried oregano 1/4 tsp ground thyme 1/4 tso ground white pepper 1/4 tso celery salt

Instructions

  1. Preheat your grill to medium high heat (around 350°F or 175°C).
  2. In a large bowl, mix together the ingredients for Southern Grill Seasoning. Set aside.
  3. Pat dry the chicken thighs and shrimp with paper towels.
  4. Brush corn cobs with half of the melted butter and season generously with half of the Southern Grill Seasoning mixture.
  5. Place corn cobs directly on the grill grates and cook for 7 8 minutes, turning occasionally, until tender and slightly charred. Remove from grill and set aside.
  6. Brush shrimp with remaining melted butter and season with half of the Southern Grill Seasoning mixture.
  7. Place shrimp on one side of the grill grates and cook for 3 4 minutes, or until pink and opaque. Remove from grill and set aside.
  8. Brush chicken thighs with remaining melted butter and season with half of the Southern Grill Seasoning mixture.
  9. Place chicken on an indirect heat zone of the grill and close the lid. Cook for 12 15 minutes, turning occasionally, or until cooked through and slightly charred. Remove from grill and let rest for a few minutes before slicing.
  10. Brush red bell peppers with remaining melted butter and season with remaining Southern Grill Seasoning mixture.
  11. Place bell peppers on the direct heat side of the grill grates and cook, turning occasionally, until slightly charred and tender, about 8 10 minutes. Remove from grill and chop into strips.
  12. Arrange cooked corn cobs, shrimp, chicken, and bell pepper strips on a large platter. Sprinkle with chopped cilantro and serve with lime wedges on the side.
