  • 2 lbs beef brisket
  • 1 cup Bama BBQ seasoning (see recipe below)
  • 8 large flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 2 cups coleslaw, homemade or store

  • 1 cup fresh cilantro leaves
  • Lime wedges

Instructions

  1. Prepare Bama BBQ seasoning in a small bowl (see recipe below).
  2. Trim excess fat from brisket and rub evenly with seasoning.
  3. Heat a preheated grill to medium high heat. Grill brisket, fat side up, until cooked through and tender, approximately 50 minutes per pound, or until internal temperature reaches 195Β°F. Remove from grill and let rest for 20 minutes before slicing against the grain into thin strips.
  4. Warm tortillas directly on the grill for about 30 seconds per side or in a dry skillet over medium heat until they just begin to puff up. Keep warm in a clean kitchen towel.
  5. Assemble tacos with brisket, cheese, coleslaw, cilantro, and a squeeze of lime juice. Serve immediately.
