Allergens

Dairy (in cheese), Gluten (in tortillas, depending on brand)

Ingredients

  • 1 lb ground beef (or turkey for a leaner option) 1 packet taco seasoning 12 small corn tortillas 1 cup shredded cheese (cheddar or Monterey Jack) 1 cup prepared salsa (your choice of mild, medium, or hot) 1 avocado, diced 1/4 cup chopped cilantro 1 lime, cut into wedges Hot sauce, to taste

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned and crumbly. Drain excess fat. Add taco seasoning and 1/2 cup water simmer for 5 minutes. Remove from heat.
  2. On an outdoor grill or in a pan on your stovetop, warm the tortillas for about 30 seconds per side until slightly charred. Keep them wrapped in a clean kitchen towel to keep them warm.
  3. To assemble tacos, layer meat mixture, cheese, salsa, avocado, and cilantro on each warm tortilla. Squeeze lime juice over the top and add a dash of hot sauce for extra heat, if desired.

Chef’s Insight

To add an extra dimension to the dish, grill the lime wedges until slightly charred, then squeeze over the tacos.

Notes

Use a combination of cheeses for added depth of flavor and texture.
