Instructions

  1. Preheat a grill or grill pan to medium high heat. Brush the corn with melted butter and season with salt and pepper. Grill until tender and slightly charred, about 8 minutes, turning occasionally.
  2. In a small bowl, mix together mayonnaise, lime juice, chipotle pepper, and salt to taste. Set aside.
  3. Once the corn is grilled, brush with the remaining melted butter. Roll each ear of corn in the cheddar cheese until evenly coated.
