  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup salsa
  • 2 cups shredded Mexican cheese blend
  • 4 slices Monterey Jack cheese
  • 8 corn tortillas
  • Olive oil for brushing
  • Optional: fresh cilantro leaves, diced avocado, lime wedges, and sour cream for serving

Instructions

  1. In a large skillet over medium heat, brown the ground beef with taco seasoning mix according to package instructions. Drain any excess grease and set aside.
  2. Preheat your oven to 350°F (175°C).
  3. In the same skillet, add black beans, corn kernels, salsa, and half of the shredded cheese blend. Stir until well combined and heated through.
  4. Layer 4 corn tortillas on top of the mixture in the skillet, then top with remaining shredded cheese blend and Monterey Jack cheese slices.
  5. Place the skillet in the preheated oven and bake for 10 12 minutes or until the cheeses are melted and bubbly.
  6. Remove from the oven, garnish with fresh cilantro leaves, and serve hot with avocado, lime wedges, and sour cream on the side.
